For the ‘Shortcake’ base of this dessert, Miss Party highly recommends using an old-fashioned, rustic ‘Delicious Cake’ for a crowd or split homemade buttermilk biscuits for a smaller gathering. ‘Delicious Cake’ is so delicious, everyone referred to it that way when asking Great-Great-Grandma Party to make it again, and the name stuck.
Strawberry Shortcake is a classic American dessert and has stayed with us for a very good reason, and Miss Party dearly loves it, too. If you’re looking to try a slightly different take on the classic, do a raspberry or blueberry sauce (made in exactly the same way). You could also let guests choose. Either way you won’t go wrong!!
6-8 lbs of fresh strawberries, washed and hulled and sliced into halves or fourths
1 cup granulated sugar + more if needed
In a bowl, add 1 cup of the sugar with the berries. Begin mashing berries with a fork, until you have a chunky, syrupy mixture. Taste berry mixture, add sugar to taste 1/8 cup at a time, (stir in sugar and allow a minute for it to dissolve into the mixture before adding more). You want sauce to be sweet to the taste, but not overly so. Store mixture in a covered plastic container.
2 quarts of whipping cream
1/2-1 cup granulated sugar
In a large bowl combine whipping cream and 1/2 cup of the sugar. With a hand mixer, beginning whipping the cream for several minutes until it begins to stiffen. Taste whipped cream, adjust sweetness with additional sugar as needed until there is a hint of sweetness. Continue whipping the cream until stiff peaks form. Cover with plastic wrap (not aluminum foil).
